Wild Game Fajita Skillet




This is an easy one-skillet (okay, 2 if you count the pot I used to cook rice) meal that features ground venison and spicy wild turkey sausage that I processed this year. Traditionally I would use venison steaks but I don't have any in my freezer (yet!). If you want you can substitute ground beef. The reason why I did fajitas is because I harvested some green peppers from my patio plants + found some forgotten peppers in the back of the fridge (we've all been there...). I made this into a bowl, but feel free to use tortillas. Enjoy!


Ingredients:

*ground venison (2lb) + wild turkey sausage (1 lb)

bell peppers mixture: green, yellow, red cut into 1/2" strips

onions cut into slices

white rice (I'm using rice I have leftover) or tortillas

lime juice/zest fresh cilantro

Toppings: cheese, sour cream (I mixed Greek yogurt + lime juice + cilantro), pico de gallo (I didn't make this but it is an option), avocado


* During the cooking process I realize this is way too much meat, I reserved the rest for tacos!


Seasonings: Adjust to your liking, I measure these with my heart but I approximated the measurements here

1.5 tsp smoked paprika

2 tsp cumin

2 tsp chili powder

3-4 large garlic cloves grated (can use garlic powder, I tend to like a lot of garlic!)

1.5 tsp onion powder

salt and pepper to taste

optional: 2-3 T adobo sauce from the chilis. I chop up a chili to add later while the meat is cooking


1) Marinate the meat in all the seasonings at least 2 hours or overnight. I also added 2 T of lime juice, mix well

2) Brown the meat in a large pan/cast iron and remove the meat when almost cooked

3) Cook the onions and peppers in the same skillet. I like mine to have a bit of crunch to them.

4)Cook your rice depending on what kind you have (I'm just reheating leftover jasmine rice which normally takes 15 minutes to cook)

5) Season your rice when cooked with lime juice and cilantro

6) When the peppers and onions are done, add in the meat and allow it to cook through

6) Make your bowls: rice, meat + veg + whatever toppings you like. Enjoy!
