Venison Taco Bowl

As I have mentioned in other posts, venison can essentially replace ground beef in a variety of recipes, and tacos is no exception. Everyone does their tacos/bowls a little differently, I just used what I happened to have on hand (some ingredients I listed are not in the picture but given as other topping options). Even though there's a lot of individual components, it only takes about 30 minutes to put everything together, and it's very easy to just reheat the cooked elements and throw on whatever toppings you want. I made mine with rice, but you can swap out for lettuce to make taco salad instead.

I was trying to be fancy and professional with this picture, but it looks a bit silly...oh well at least it tastes good!

Ingredients:

2 lb ground venison or venison sausage

2 chilis in adobo sauce (optional, but I like the spice)

2 tsp chili powder

2 tsp ground cumin

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

salt/pepper to taste

1 cup white rice (or rice of choice)

1-2 fresh limes

Other Toppings:

sour cream (I did 1/2 cup Greek yogurt + the zest/juice of 1/2 lime)

pickled jalapeno rings

fresh salsa

tortilla chips

avocado

shredded cheese

Instructions:

1) Prepare your rice by rinsing it in a large bowl of water, discarding the water, and repeat x2. Yes, it's an extra step, but it will keep the rice from clumping together as it cooks. Start cooking the rice per package directions (mine takes 20 minutes so I get it started first)

2) Combine all your seasonings for the meat in a separate small bowl (you can add/remove whatever you don't like).

3) Heat a cast iron pan or large skillet on medium-high heat. Add the meat, then add your seasonings and stir well to combine.

4) Once the meat is browned, reduce to medium and add the chopped chilis (you can also replace with jalapenos if you want; I also add 3 T of the pickled jalapeno juice but this is optional!).

5) Once the rice is done, add the zest/juice of 1 lime and fluff with a fork. Enjoy with whatever toppings you like.
