Venison Pot Roast

Sadly, my crockpot of only 2 years broke a month ago (it had been running hot even on low which is probably why). For Christmas, I got a new crockpot and this was the first thing I made with it. I had a long day at work so of course it was a great comfort to have dinner ready and the apartment smelled amazing. I didn't include any potatoes in the pot roast itself, but you can serve with mashed potatoes or over rice. I also didn't have any beef broth so I used my homemade chicken broth and it turned out just as well if not better. You can also do this on the stove or dutch oven, it will just be done in 2-3 hours instead.


Ingredients:

1 small venison roast + 3 small venison steaks (I didn't have a second roast)

3 cups carrots chopped into large chunks

2 cups onions in large chunks

3 cups chicken broth + 1 cup water

2 T Worcestershire sauce

2 bay leaves

4 T minced garlic

3 T dried rosemary

salt/pepper to taste (I'm pretty generous with pepper)


Instructions:

1) Add all the ingredients to the crockpot (you can brown the meat first then deglaze the pan with broth before adding, but I didn't have time)

2) Set crockpot to low for 8 hours, shred the meat and serve with potatoes, bread, or rice.
