Strawberry Rhubarb Jam Bars

I made a lot of strawberry rhubarb jam this year and realized I'm not going through it very quickly. Mom always made a really good jam bar recipe that is freezer-friendly, but I don't think they ever made it to the freezer! I don't have her recipe so I re-created something similar and they turned out great. As you can see, I couldn't help but sample one (just to make sure they taste good, of course). The edges may look burnt but I can assure you they're not burnt, just crispy.

Ingredients:

1/2 cup melted butter

1 1/4 cups flour

3/4 cup instant oats

3/4 cup brown sugar

1 tsp vanilla extract

3/4 cup-1 cup jam of choice


Instructions:

1) Combine the sugar, flour, oats, vanilla.

2) Stir in melted butter until combined. You can add a bit more flour if the mixture does not come together

3) Grease a 9x9 pan with non-stick spray or butter (you can also line with parchment paper, the bars will come out easier). Add enough of the mixture to form a crust on the bottom about 1/4" thick, leave about 1/2 cup for the topping

4) Add the jam and spread until even, then sprinkle remaining topping

5) Bake 375 F for about 30 minutes until golden brown. Allow to set for 5 minutes before cutting


Can store in the fridge covered for a week or 2-3 months in the freezer
