Sour Cream Bread

This recipe has several variations, but I always remembered it as the banana bread my mom made for us growing up. It was her way of sneaking in a fruit or vegetable which can be hard to do with young children. This recipe was a well-kept secret for a long time, she had only shared it with a friend whose father was very sick at the time and this bread was the only thing he would eat. There's a lot of ingredients, but well worth the effort!


Ingredients:

2 cups grated zucchini or 3 mashed bananas or 2 cups mashed strawberries

2 cups sugar

2 eggs

1 cup sour cream

1/2 cup vegetable or canola oil

1 tsp vanilla


3 cups flour

1 tsp salt

1/2 tsp baking powder

1 tsp baking soda

2 tsp cinnamon

1 tsp nutmeg

1/8 tsp cloves


1/2 tsp lemon zest (optional)

1 cup chopped nuts (optional)

1 cup chocolate chips (not optional in my opinion but I didn't have any!)


Instructions:

1) Beat together the zucchini or fruit, sour cream, eggs, sugar

2) Add oil and mix well, add vanilla

3) Mix all dry ingredients separately then stir in wet ingredients

4) Stir in nuts, lemon zest, chocolate chips if using

5) Pour into 2 lightly greased loaf pans

6) Bake 350 F for 40-45 minutes (her recipe says 1 hour, but mine were done at 45 minutes). Let cool for 10 minutes before removing from pans
