Peaches

Canning peaches has been a bit of a learning curve for me. First, I accidentally bought white peaches which I don't think are meant for canning. They look mushy but taste good so I will use them to make peach crisp. I made a second small batch of yellow peaches from my Pap's peach trees. I would've gotten more but the racoons got to them first this year! I have had issues with syrup leaking from the jars (siphoning) so I hope by next year I will have fixed this issue. See picture below!


This recipe is for 7 quart jars, adjust to the amount you're doing.


Ingredients:

17 pounds of yellow peaches (Make sure they are soft! Unripe peaches will not peel well and you will struggle)

Syrup: 1 1/2 cups sugar + 5 3/4 cups water

1/4 cup bottled lemon juice


Instructions:

1) Fill water bath canner with enough water to cover 1 inch over the jars

2) Wash jars with hot, soapy water then place in hot water canner until ready to use

3) Sanitize lids/rims by boiling in water several minutes, can leave in water until ready to use

4) To peel peaches: Place one layer of peaches in simmering water for 30 seconds, then immediately place in ice water bath for 2 minutes (I use my sink for large batches). Use a paring knife to remove the peels

5) Slice peaches into halves or slices, removing the pit. Add and mix in lemon juice

6) Boil sugar and water mixture

7) Place peach slices into hot jars then pour the hot syrup over peaches leaving 1/2" headspace. Gently tap the jars along the side or use a long spatula along the inside to remove air bubbles

8) Clean edges and inside/outside of jar rims with a clean, damp cloth. Secure with lid and rim

9) Boil pints for 25 minutes and quarts for 30 minutes. Turn off heat and let sit for 5 minutes before removing

10) Place on clean towel and let rest 24 hours. Check if jars have sealed by pressing in the middle, it should not move/give at all. Unsealed jars should be placed in the fridge. If syrup has leaked out, wash jars/rim thoroughly with soapy water to prevent mold. Any exposed fruit at the top may discolor over time but is still safe to eat. Sealed jars are good for 1 year.
