Okay, so this recipe also falls under "Family Recipes," but I think bread deserves its own section. My mom has been making this for as long as I remember whether as loaves or in rolls that are often devoured during Thanksgiving dinner. If you're looking for something new to make with your leftover mashed potatoes, this recipe is for you!
This recipe makes 2 loaves (you can definitely make rolls as mentioned, but I only made loaves)
Ingredients:
1 pack of instant yeast
1/3 cup warm water 95-105 degrees F (not hot or it will kill the yeast)
1 tsp sugar
5-6 cups flour
1 cup milk
1/2 cup butter
1/2 cup sugar
1 cup mashed potatoes
1 tsp salt
2 eggs
Instructions:
1) Combine yeast, warm water and 1 tsp sugar and let set 10 minutes until frothy
2) Heat butter and milk until melted
3) Add mashed potatoes + sugar and cool until lukewarm
4) Combine potato and yeast mixtures then add eggs
5) Slowly add 5-6 cups of flour and knead 5-7 minutes by hand or with the dough hook on a stand mixer. Place in a lightly greased bowl, cover and allow to rise in a warm area 45 minutes or until doubled in size
6) Bake 350 F 30-35 minutes
