Mom's Lemon Bars

This is definitely a childhood favorite, and even though mom hasn't made these in years, I still remember eating them as soon as she cut into them. These use fresh lemon zest and juice, the store-bought stuff just won't have the right flavor. These also store very well in the freezer and (I think) taste even better.


Ingredients (Crust)

1 cup flour

1/4 cup powdered sugar

1/2 cup cold butter


Ingredients (Filling)

2 eggs

1 cup sugar

1/2 tsp lemon zest (I used about 1/3 lemon)

3 T lemon juice (I used 1 lemon)

2 T flour

1/2 tsp baking powder

2 T powdered sugar for the top


Instructions:

1) To make the crust: cut the butter in with the flour and powdered sugar until it resembles a course meal. You can use a food processor or by hand. Press into a 9x9 pan and bake 350 F 15 minutes.


2) Whisk together the lemon juice/zest, sugar, and eggs. Mix the flour and baking powder separately then mix into the wet ingredients


3) Pour the filling over the crust (I let it cool for 10 minutes first) and bake 350 F for 20 minutes. Sprinkle with powdered sugar and let it cool 15 minutes before cutting.
