I called my mom one day for her recipe which she apparently came up with on a whim when I was little. She said I had a hard time eating meat so Gram suggested she use broth instead. So with some broth, tiny egg noodles, and shredded carrots she made the chicken soup I grew up on. It's an extremely simple recipe but I'm quite fond of it, and it does go over well with kids. I got my covid booster the other day with some moderate side effects so I threw this together and it was just what I needed. I couldn't find the exact noodles she used, but any small pasta will do. In keeping with her original recipe I didn't add meat but you definitely can.
Ingredients:
4 cups chicken broth
1 cup cooked chicken chopped into small pieces
1 cup shredded carrots
2 cups small egg noodles or small pasta of choice
3 T cup chopped parsley
Instructions:
1)Boil the broth and add the noodles and carrots until cooked through
2) Add the cooked chicken and parsley and serve when warmed through
