This is probably one of the earliest recipes I remember creating myself, they're super simple to make and they come out perfectly every time. I have also used fresh cut strawberries with good results. The ones in the picture below are not as golden brown because I didn't realize I forgot sugar! Not to worry, they actually tasted pretty good, just more bread-like. Nothing a drizzle of honey can't solve!
Ingredients:
1 cup fresh or frozen blueberries 1 tsp vanilla extract
1/2 cup sugar 2 cups flour
1 egg 3/4 tsp baking soda
3/4 cup buttermilk* 1 tsp cinnamon
1/4 cup melted butter
Topping: 1/4 cold butter cut with brown sugar, cinnamon, oats
* buttermilk= 1 cup milk + 1 tablespoon vinegar or lemon juice. Let set 5 minutes.
1) Mix flour, cinnamon, baking soda together separately
2) Mix wet ingredients until combined. Make sure the butter is *warm* and not hot. If your mixture starts to curdle, don't worry! This happens and won't affect the flavor. Combine into the dry ingredients.
3) Fold in blueberries (toss berries with a bit of flour beforehand so they don't sink to the bottom)
4) Spoon into greased muffin tins 3/4 of the way then add the topping
5) Bake 400 F 12-15 minutes. Let set in the tin 5 minutes before removing
