Chocolate Cake + Peanut Butter Frosting

Normally I'm not a cake person, but anyone who knows me knows that peanut butter is one of my favorite things. Gram has been making this amazing cake for birthdays and celebrations for years. The secret to this cake is the coffee: don't skip this step! It enhances the chocolate flavor making it taste so much better. The frosting originally came from a family friend Judy who got it from her sister-in-law Lois. Judy sadly passed away, but she and her husband have been good family friends for many years.


**I've always known this recipe as a cake, but you could definitely make amazing cupcakes




Cake Ingredients: 2 cups sugar

1/2 cup vegetable oil

1 3/4-2 cups flour

1 cup coffee

3/4 cup cocoa powder

2 tsp vanilla

1.5 tsp baking powder

1 cup milk

1.5 tsp baking soda

Of3 eggs


Baking Instructions:

1) Combine dry ingredients and wet ingredients separately, then add the dry ingredients to the wet until just combined

2) Place in a 13x9 inch greased pan, bake 350 F for 30-35 minutes until a knife/toothpick comes out clean

3) Once cake is cooled to room temperate, apply frosting. This cake freezes really well for 1-2 months.


*Frosting Ingredients:

5 T flour

1 cup milk

1/2 cup butter

1 cup sugar

1 tsp vanilla

1/2 cup peanut butter


*Gram changed the recipe to include peanut butter. If you want a plain frosting, remove peanut butter and replace with 1/2 cup of butter


Frosting Instructions:

1) Heat the flour + milk on the stovetop until thick, cool completely

2) Cream remaining ingredients then mix the flour/milk mixture


The frosting also freezes well. Enjoy!
